Ingredients
SPICY AND SPICY PARMESAN CHICKEN
- 3 chicken breasts, pounded (15 oz)
- 2 tablespoons coconut flour
- 2 beaten eggs
- 3 bags Hot and Spicy Quest Chipsfinely crushed
- ⅓ cup finely grated Parmesan cheese
- 6 tablespoons spicy marinara sauce
- ½ cup grated mozzarella cheese
- Fresh basil to cover
- Crushed red pepper to cover
Method
- Preheat the oven to 425 F and prepare a baking sheet with parchment paper.
- Pat the chicken breast dry with a paper towel. Place the coconut flour in a shallow plate or bowl, the eggs in a shallow bowl, and the chips and parmesan in a shallow bowl.
- Coat each chicken breast with coconut flour and then top with the beaten eggs.
- Coat thinly with the crushed chip and Parmesan mixture until completely coated on all sides and place on the baking sheet.
- Bake for 20 minutes, remove from oven and pour marinara sauce over chicken breast and top with mozzarella cheese.
- Return to oven for 5 minutes or until cooked through.
- Serve with fresh basil and crushed red pepper.
