Ingredients
PROTEIN SOUP WITH TORTILLA AND PUMPKIN CHIP
- 2 tablespoons olive oil, separated
- 1 medium pumpkin, peeled and cut into cubes
- 1 white onion, chopped
- 1 clove garlic, diced
- 2 cups chicken broth
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon sage
- ⅓ cup heavy cream
- 2 bags Quest Chili Lime Tortilla Chips
Method
- Preheat the oven to 425 F and prepare a pan with parchment paper.
- Drizzle squash with 1 tablespoon olive oil. Cook for 30-40 minutes and tender.
- Meanwhile, add the remaining tablespoon of olive oil to a pot over medium heat.
- Once hot, add the onion and stir. Cook until tender and golden, about 4-5 minutes.
- Add garlic and cook for 1-2 minutes. Transfer to a blender along with the cooked squash, salt, pepper, sage, and 1 cup broth.
- Blend until smooth and then return to the pot. Add the remaining broth and heavy cream and simmer for 5 minutes before transferring to bowls and serving with Quest chili lime tortilla chips on top.
