Ingredients
MINT BARK DONUTS
Cold:
- ½ cup sugar-free white chocolate chips
- ½ tablespoon coconut oil
- 2 tablespoons crushed candy canes
Method
- Preheat the oven to 350 F and prepare two standard donut pans with nonstick spray.
- In a bowl, whisk together the flour, cocoa powder, zero-calorie sweetener, protein powder, baking soda, baking powder, and salt.
- In another microwave safe bowl, break the mint bark stick into small pieces and add the milk. Place the bowl in the microwave for 45 seconds.
- Stir gently with a fork, if there are still large pieces, return to the microwave for another 15 seconds.
- Let cool slightly before adding the oil and eggs.
- Add the wet ingredients to the dry and stir until a dough forms and no dry spots remain.
- Transfer the dough to a large resealable plastic bag and cut a small hole in the corner to create a piping bag.
- Place the dough into 8 of the donut cavities. Bake the donuts for 12-15 minutes and cook through. Let cool.
- Once the donuts have cooled, melt the white chocolate chips and oil until smooth.
- Coat each donut with white chocolate. Top with candy pieces.
- Let the chocolate sit for 10 minutes before serving.
