Ingredients

PECAN AND CHOCOLATE PIE BARS WITH BROWN BUTTER AND CINNAMON

Crust:

Stuffed:

  • 6 tablespoons of butter
  • 6 tablespoons heavy cream
  • ⅓ cup no-calorie sweetener
  • 1 teaspoon vanilla extract
  • 2 cups chopped walnuts

Deck:

  • 3 tablespoons sugar-free chocolate chips
  • ½ teaspoon coconut oil

Method

  1. Preheat the oven to 350 F and prepare an 8×8 inch pan with parchment paper.
  2. Place the cookies and almond flour in a food processor and blend until fine crumbs form.
  3. Add the melted butter and pulse to combine.
  4. Press the mixture into the bottom of the prepared pan and bake for 6-7 minutes and the edges will begin to brown.
  5. Add the butter, heavy cream, and no-calorie sweetener to a medium saucepan over medium heat.
  6. Cook for 12-15 minutes and the mixture will begin to darken.
  7. Remove from heat and stir in vanilla extract and walnut pieces until well coated.
  8. Transfer to crust and press mixture evenly onto crust. Chill for at least 2 hours.
  9. Add the chocolate and coconut oil to a microwave safe dish and cook for 20 seconds, stir and cook another 20 seconds and stir gently.
  10. Drizzle chocolate over nuts. Chill until the chocolate hardens. Cut into 16 bars and serve.
