Sheet Pan Chicken Sausage & Veggies With Maple-Thyme Drizzle

Inside: Need an easy weeknight dinner? This one-pan chicken with sausage and vegetables cooks in 30 minutes and is topped with a kid-friendly, flavorful sauce.

This has quickly become one of our favorite weeknight meals.

As a cook and dietitian, I love it because it’s quick, easy, and packed with veggies.

As the resident dishwasher, my husband appreciates that there is only one pot to clean.

Ingredients you need to prepare chicken and vegetable sausages in a pan

  • Sweet potato
  • 4 chicken sausages: I use ALDI’s apple chicken sausage. You can also substitute kielbasa.
  • Broccoli
  • Bell pepper: Choose a sweet one (look for red, yellow or orange), not a green pepper which is more bitter.
  • Maple Syrup: Use pure maple syrup, which only has one ingredient (maple syrup)
  • Olive oil
  • Mustard: You can use Dijon or stone-ground mustard.
  • Garlic
  • Thyme: I use dried thyme.
  • Salt: I use kosher salt.

How to make chicken and vegetable sausages in a skillet

  1. Chop the potatoes, sausages, broccoli and peppers – everything should be bite-sized so that it cooks evenly (and can be eaten without a knife!).
  2. Prepare the sauce: Mix all the sauce ingredients together and set aside.
  3. Bake the potatoes first – this will give them a head start in the cooking process. After 15 minutes, add everything else, drizzle or brush with sauce and continue baking.
  4. Drizzle with remaining sauce, serve in bowls and enjoy.

Tips for preparing this meal

  • Use a baking tray that is large enough. I recommend a medium-sized baking tray, measuring approximately 45cm x 33cm.
  • If you want to prepare a larger portion, use a second baking sheet. Piling food on a baking sheet can cause uneven cooking.
  • Feel free to mix everything together on the baking sheet or keep them separate as shown below (tip: pickier eaters may appreciate having things separate).

Variations

  • Use your favorite type of sausage or kielbasa.
  • Make the sauce with honey instead of maple syrup.
  • Swap out vegetables your family loves, such as white potatoes instead of sweet potatoes, fresh green beans instead of bell peppers, or halved Brussels sprouts instead of broccoli.

How should I store leftovers?

Place them in an airtight container and refrigerate. Consume them within three days.

Can I make it vegetarian?

Of course. Only use plant-based sausages.

Ingredients

  • 2 cups diced sweet potato

  • 4 chicken sausage links

  • 2 cups broccoli florets

  • 1 bell pepper cut into small pieces

  • 2 tablespoons pure maple syrup

  • 1 tablespoon + 3 teaspoons olive oil

  • 1 tablespoon mustard (Dijon or stone ground)

  • 2 cloves of garlic, minced or pressed

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat oven to 400 degrees F. Spray a baking sheet with cooking spray and set aside.
  2. Cut the sweet potato, broccoli and peppers into bite-sized pieces.
  3. In a medium bowl, toss the sweet potato with 1 teaspoon olive oil and place on a baking sheet. Bake for 15 minutes.
  4. While the sweet potato is baking, mix together the sauce ingredients in a small dish: maple syrup, 1 tablespoon olive oil, mustard, garlic, thyme, and salt.
  5. In the same bowl you put the potatoes in, mix the sausage, broccoli and bell pepper with 2 teaspoons of olive oil. Place on a baking sheet with the potatoes, brush with half of the sauce and bake for 15 more minutes.
  6. Remove from the oven, brush with the remaining sauce and serve.

Grades
