This is the fresh tomato sauce recipe of the moment! Those tomatoes are hitting the stores and farmers markets and this is the time of year when they taste their best.
This year I taught how to roast tomatoes and made a delicious cold tomato soup, but there’s nothing like fresh tomato sauce.
It’s so easy to make. If you haven’t, you’ll be wondering where it’s been hiding all these years. The key, of course, is the freshest tomatoes you can find. Styrofoam tomatoes won’t work in this recipe.
Just a note on pasta. I only use whole wheat pasta (like my bread). You can’t miss it in the pasta aisle and it comes in all shapes and sizes.
In one serving of angel hair (2 ounces), there are 7 grams of fiber and 8 grams of protein in this pasta, which is made with just one ingredient: whole grain durum wheat flour.
Does it taste good? YES! It all depends on what you put on top. I like the nutty flavor, but it’s not that different from regular white flour pasta.
Back to the sauce! All you have to do is cut the tomatoes into large pieces, there is no need to remove the seeds or the skin.
Then you mix it with some fresh basil, garlic, olive oil and a little salt and pepper and let it sit while you do other important things.
And that’s it! To heat it up, serve it on top of the hot pasta and you can add a little grated parmesan cheese if you like.
The resting time allows the tomatoes to release their juice and the pasta to absorb it when stirred. This sauce is so good!!!
Don’t feel the need to eat this with pasta. You can put it on toast or pour it over spaghetti squash or zoodles.

Fresh tomato sauce recipe
Makes 3 ½ cups (4 servings)

Ingredients
1 ½ pounds fresh tomatoes, coarsely chopped
1/3 cup fresh basil, chopped
1 tablespoon extra virgin olive oil
2 cloves of garlic, peeled and chopped
salt and pepper to taste
Instructions
Combine tomatoes, basil, olive oil, and garlic in a medium bowl. Let sit (covered) at room temperature for 30 to 60 minutes. Serve over pasta, bread, or squash.
