Method
- Preheat the oven to 425 F and prepare a large baking sheet with the oil and place it in the oven.
- Wash the potatoes well and use a box grater to shred the potatoes and onion.
- Transfer the grated potatoes and onion to a clean kitchen towel and drain all the water.
- Let it sit for 5 minutes and then drain again until all the liquid is gone.
- Add the drained potatoes and onion to a bowl along with the egg, crushed potato chips, and salt and pepper. Use your hands to combine.
- Remove the baking sheet from the oven and use an ice cream scoop to make 12 mounds.
- Press down the mounds with a spatula.
- Bake for 13-15 minutes, flip and bake for 5 more minutes.
- Serve with sour cream and chopped green onion if desired.
