This quick banana bread gets its speed from a waffle iron.

To say I’m a little obsessed with my waffle iron is an understatement. I made a banana and peanut butter waffle and a waffle potato bite.

After some serious but brief deliberation, I have decided to give away my stove and microwave and keep my waffle iron. What am I doing with all these appliances?

What I like about my waffle iron is that it makes little Lots of delicious food and it only takes me a few minutes. This way, I don’t end up with too much delicious food lying around, for example, a whole loaf of banana bread.

Plus, I don’t have to wait a whole hour for something to bake, so I reduce my time in the kitchen. Everyone wins!

I’ve tried many waffle irons over the years and find that the best ones cost around $40. The $15 ones break too easily and the $100 ones are unnecessarily expensive. There are tons of waffle iron reviews on Amazon, so pick your poison.

This recipe features a low calorie banana bread. Instead of butter, I use buttermilk, which is tasty but has much less saturated fat. I also use a mixture of whole wheat flour and white flour to give it a whole wheat touch.

This dough is actually just banana bread!! But it’s much less batter than your average bread.

You’re made to think this is just a banana waffle, but it’s not. It is much denser than a waffle. I toasted this for breakfast, ate it as a cookie with coffee, and threw it in my son’s lunchbox because he is nut-free (his school has a no-nut policy).

They have an instant serving size that makes it easier to stay on top of your consumption. Freeze some of these for a quick snack or breakfast on the run.

Makes 8 small waffle breads

Ingredients

1 egg
¼ cup) sugar
2 mashed bananas
1/3 cup buttermilk
2 teaspoons vegetable oil
2 teaspoons vanilla extract
1 cup white whole wheat flour or ½ cup white flour and ½ cup whole wheat flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt

Instructions

Spray a waffle iron with nonstick spray. Using a whisk or fork, beat the eggs and sugar in a medium bowl. Add mashed bananas, buttermilk, vegetable oil and vanilla and mix. Stir in the flour, baking powder, baking soda, and salt until combined.

Place about ¼ cup batter on 4 sections of the waffle iron and cook for 4 minutes. Remove when firm. Enjoy immediately or refrigerate for later.
