Ingredients

PROTEIN SOUP WITH TORTILLA AND PUMPKIN CHIP

  • 2 tablespoons olive oil, separated
  • 1 medium pumpkin, peeled and cut into cubes
  • 1 white onion, chopped
  • 1 clove garlic, diced
  • 2 cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon sage
  • ⅓ cup heavy cream
  • 2 bags Quest Chili Lime Tortilla Chips

Method

  1. Preheat the oven to 425 F and prepare a pan with parchment paper.
  2. Drizzle squash with 1 tablespoon olive oil. Cook for 30-40 minutes and tender.
  3. Meanwhile, add the remaining tablespoon of olive oil to a pot over medium heat.
  4. Once hot, add the onion and stir. Cook until tender and golden, about 4-5 minutes.
  5. Add garlic and cook for 1-2 minutes. Transfer to a blender along with the cooked squash, salt, pepper, sage, and 1 cup broth.
  6. Blend until smooth and then return to the pot. Add the remaining broth and heavy cream and simmer for 5 minutes before transferring to bowls and serving with Quest chili lime tortilla chips on top.
