- 1 cup sugar-free white chocolate chips
- 1 tablespoon coconut oil
- 2 tablespoons sprinkles
Method
- Preheat the oven to 350 F and prepare a 12×9-inch cake pan with nonstick spray and parchment paper.
- In a bowl, mix almond flour, sweetener, proteins, baking powder and salt.
- Break the muffins into small pieces and add them to the dry ingredients.
- In another bowl, whisk together the oil, ricotta, eggs and vanilla.
- Add the dry ingredients to the wet and use a rubber spatula to stir until no dry spots remain. Transfer the dough to a cake pan and bake for 17-20 minutes and cook through. Let cool and turn the cake out onto a cutting board.
- Cut the cake into 44 even cubes (about 1”).
- Mix the filling ingredients together and then transfer to a piping bag. Place about 1 tablespoon of filling on top of half of the cut cakes and then even them with the remaining cakes.
- Melt white chocolate and coconut oil until smooth. Pour white chocolate over each cake.
- Top with sprinkles and serve.
