Here’s a recap of my friend’s trip to the Outer Banks.
Friends trip to OBX
When our beach trip on Bald Head Island was a bust, Katie suggested we take the trip again to her parents’ house in Corolla on the Outer Banks. While we knew the water would be too cold for swimming this time of year, we hoped the skies would be sunny so we could at least take a few walks on the beach. Half of the long weekend was stormy, but we were able to enjoy some fantastic sunny walks on the beach!
Road Trip Lunch
We got up on a Thursday and drove four hours to the coast. We stopped at the NC Coast Grill & Bar for lunch before heading home.
Beers and shrimp soup!
walk on the beach
The weather was pretty cloudy and windy, but we took a short walk before it started to rain.
Most of our time was spent on this giant couch reading, playing games like Rummikub and the Wordle Party Game (a great Christmas gift for anyone who loves NYT games!) and of course, watching the NYT games over coffee every morning. We also watched the movie ‘Challengers’ and I don’t recommend it. Was bad! I love that we are such a calm and relaxed group just happy relaxing!
Simple Fish Tacos
Thursday night we made tacos with fresh mahi mahi. Simple, but we didn’t have the effort to make them fancy! The fish was the star.
Breakfast
Quesadillas / Salad / Sol Chips
(waiting for the sun to come out!)
Beach Walk #2
Once the rain let up, we ventured out for a second walk on the beach!
Low country boil
For our second night, we did a low country boil! This meal is so easy and a crowd pleaser.
Chef Sean’s Pancakes
Sean made us Kodiak pancakes on Saturday morning.
And the sun came out!!
Beach walk #3
We took a very long walk this day enjoying the breeze!
Boi Island Series
formal evening
We laughed a little at formal night after being in joggers for two days. Everyone dressed up to go out to dinner!
Dinner on the northern banks
We dined at Northern Banks It had great service and good food. We enjoyed drinks at the bar while waiting for a table, and the waiter gave us each an oyster!
I had a crab dish and spinach salad for dinner. I forgot the photos!
