Ingredients

PEANUT BUTTER DONUTS

  • 1 cup almond flour
  • 2 tablespoons gluten-free flour
  • 2 tablespoons no-calorie sweetener
  • ½ tablespoon Quest Peanut Butter Protein Powder
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ⅛ teaspoon salt
  • ¼ cup almond milk
  • 2 tablespoons natural peanut butter
  • 2 tablespoons 0% Greek yogurt
  • 1 egg
  • 1 egg white
  • 1 teaspoon vanilla extract

Cold:

Method

  1. Preheat the oven to 350 F and prepare a 2.5-inch donut pan with nonstick spray.
  2. In a bowl, mix the flours, sweetener, proteins, baking powder, baking soda and salt.
  3. In another bowl, whisk together the almond milk, peanut butter, yogurt, egg, egg white, and vanilla until smooth.
  4. Add the dry ingredients to the wet and use a rubber spatula to combine.
  5. Transfer the dough to a piping bag and fill 7 donut cavities with an even amount of dough. Bake the donuts for 16-18 minutes. Let cool.
  6. Once cooled, melt the chocolate and butter until smooth.
  7. Dip each donut into the chocolate and then top with crushed candy. Chill until chocolate is solid.
