Method
- In a bowl, use your hands to break the muffins into small pieces. Add the cream cheese and mix with your hands.
- Separate the dough into 6 balls.
- Melt the chocolate and coconut oil together using a double boiler (a heatproof bowl set over a small pot of simmering water).
- Dip each cake pop stick into the chocolate about ½ inch and then insert into each cake ball.
- Chill the cake balls for 20 minutes.
- If necessary, re-melt the chocolate and dip each cake pop into the chocolate until completely covered.
- Let excess chocolate drip off, finish with sprinkles and place cake pops on a parchment paper-lined baking sheet.
- Chill until chocolate is set. Enjoy.
