This Greek salad dressing recipe is what you need for your salads and marinades. I promise you will never buy a bottle of dressing again.

Bottled Greek or Italian dressings rarely use extra virgin olive oil because it’s expensive. You’ll see soybean oil listed on the label. Also, since it comes in a bottle, it’s fine, but it’s not fresh.

I almost always make my own salad dressing and use it throughout the week. My kids are sick of it!

My homemade mayo-free Caesar salad dressing is also a great option for those who don’t love vinegar like I do. I might drink it.

My go-to Greek salad dressing is easy And it tastes so much better. The key ingredient here is fresh lemon juice. Is there anything like fresh lemon juice?

I used to hate making fresh lime juice because squeezing limes is such a pain. It was at a party (where I was making fresh margarita mix using bags of limes) that I discovered this tool.

Cut the lemon or lime in half and squeeze it. It’s quick and allows you to extract the juice. If the lemon is hard, I roll it on the counter to soften it before cutting it in half.

It’s one of those kitchen tools that makes you wonder: why didn’t I buy this sooner?

I bought this lemon and lime squeezer and have used it almost every week (see link below). I have squeezed oranges, lemons, and limes, and that little bit of fresh juice is a wonderful flavor enhancer.

Mix this Greek salad dressing with my version of Greek salad (lettuce, feta cheese, tomatoes, red onion, olives, pickled peppers…). You can also use it to marinate chicken for the grill.

Ingredients

1/2 cup fresh lemon juice (from about 4 lemons)
1/4 cup red wine vinegar
1 cup extra virgin olive oil
3 cloves of garlic, chopped
1 1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Instructions

Mix lemon juice, vinegar, olive oil, garlic, oregano, salt and pepper in a large jar and shake. Store in the refrigerator and enjoy throughout the week.
