These zucchini burgers were almost gone before I photographed them. Here are the dangers of having teenagers in the house when you work in your own kitchen.
I usually make a recipe, photograph it, and then offer it to anyone who happens to be in the kitchen. That person is usually my partner, Matt, who gives me a review and tells me if the recipe should be featured here on Snack Girl.
I appreciate Matt’s input, but now that my son and daughter are home, it can be a struggle to get the photo taken. They’re just hanging around waiting for someone to cook something so they can pounce on it.
They both know how to cook but they prefer someone else to cook for them. Tell me.
I grated the zucchini, carrot and onion in my food processor and then mixed them with the other ingredients. Forming the patties is easy (although be aware that some liquid may ooze out while they are waiting to cook).
I used my hands a lot to keep the burgers in one piece before putting them in the pan.
After cooking them for about 4 minutes per side, my daughter came into the kitchen and asked me to eat them. Being a food blogger means I have to photograph food. Before it is eatenI can’t photograph my daughter’s full belly as a representation of a zucchini burger.
Once I was done, he ate them ALL! He loved the feta cheese. I think the salty feta cheese makes a nice contrast between the sweet carrot and zucchini.
I’ve found that if you call something a “burger,” like my lentil mushroom burger or my portobello burger, your kids will eat it.
My daughter thought they weren’t burgers but rather zucchini latkes, but she loves latkes.

Zucchini Burger Recipe
Serves 8 burgers
Preparation time: 10 min.
Cooking time: 8-10 minutes.

Ingredients
1 large zucchini
1/2 teaspoon salt
1 large carrot
1/2 yellow onion
1 large egg
1/4 cup whole wheat flour
1/4 cup crumbled feta cheese
Instructions
Using a box grater or the grating attachment of a food processor, grate the zucchini. Place it in a small bowl with 1/2 teaspoon of salt and let it sit for five minutes. After the time is up, drain off any excess water with a cloth or paper towel and place the zucchini in a large bowl. Grate the carrot and onion in the food processor and add them to the bowl with the egg, flour, and feta. Blend until combined. Fill the palm of your hand with the mixture and form into a patty. You should be able to create about 8 patties.
Heat a nonstick skillet over medium heat and spray with nonstick spray. Cook on each side for four minutes and serve immediately.
