Ingredients
LEMON AND BLUEBERRY CRISP
- Crunchy:
- 2 Lemon Cake Quest Bars
- 2 tablespoons of calorie-free sweetener
- Pinch of salt
- 3 tablespoons butter, at room temperature
- Stuffed:
- 4 cups fresh blueberries
- 1 tablespoon lemon juice
- 1 tablespoon of calorie-free sweetener
- 1 tablespoon cornstarch
Method
- Preheat oven to 350 F and line a baking sheet with parchment paper.
- Break the Quest bar into small pieces and place on the baking sheet. Bake for 7-8 minutes until golden. Allow to cool completely.
- Once cooled, add the bar pieces to a blender and blend until fine crumbs form. Then, transfer them to a bowl with the no-calorie sweetener and salt and mix. Add the butter and use a fork to mix. Set aside.
- In a bowl, mix the filling ingredients and then divide them between 6 moulds. Cover with the crunchy topping and bake for 15 minutes.
- Serve warm with ice cream if desired.
