- Milk chocolate chipsMy family and I liked the flavor better when I used milk chocolate chips instead of semi-sweet.
- Curd:I use low fat but you can use whatever type you prefer.
- Maple syrup:I use real maple syrup.
- Vanilla extract:Pure or imitation, whatever you have.
- Sprinkle:Optional (but fun!).
How to Make Frozen Fudge Bites
Melt the chocolate chips in the microwave, stirring every 30 seconds until completely melted (this took about 75 seconds total in my microwave).
Combine melted chocolate, cottage cheese, maple syrup and vanilla in a food processor. I use my trusty mini food processor For this, I have tried it in the blender and it is too thick.
Line a mini muffin pan with paper coverings (or spray well with cooking spray). Pour the mixture into the compartments, about two-thirds full, top with sprinkles if desired, and freeze until firm. They take about 2 to 3 hours to completely set.
Remove from the pan and store in an airtight container in the freezer. Enjoy cold, straight from the freezer.

- Use semi-sweet chips instead of milk.

- Stir a tablespoon of peanut butter into the dough.

Can I use a blender instead?
In my experience, no. I tried using a high-speed blender and the mixture ended up too thick.
How do I save them?
They must be stored in the freezer or they will melt. Once they are completely frozen, carefully remove them from the muffin tin with a spoon and place them in an airtight container. Eat them straight from the freezer.
Do these taste like cottage cheese?
No, as long as you use milk chocolate chips. The strong cottage cheese flavor was more noticeable when you used semi-sweet chips.
Can I use semi-sweet chips?
Yes, but they are not as sweet and the sour taste of cottage cheese is more pronounced.
Can I make them with less sugar?
If you wish, you can omit the maple syrup and/or reduce the chocolate chips to 2/3 or 3/4 cup.

Instructions
- Line a miniature muffin pan with miniature cupcake liners OR spray well with cooking spray.
- Melt the chocolate in the microwave in a glass bowl, stirring every 30 seconds until melted. Do not overheat! Allow to cool slightly.
- Place the cottage cheese, melted chocolate, maple syrup and vanilla in a food processor. Blend until completely smooth and homogeneous.
- Spoon the mixture into a mini muffin tin until it is 2/3 full.
- Place the pan in the freezer until firm, about 2 to 3 hours.
