I’m sharing 5 healthy eating recipes for weeknights that are on repeat in our house and the whole family loves them!
While we love our special treats and gourmet meals at Harney’s Home, on a day-to-day basis we try to focus on eating whole foods, fresh produce, and quality proteins. But if I don’t do a little planning (aka easy meal planning for busy moms), putting healthy recipes on the table night after night can be a challenge due to our busy schedules.
It can be tempting to order takeout while preparing a home-cooked meal when we’ve been working, at school, and at dance practice (for several hours!), but I know we all feel better when we eat a nutritious home-cooked meal at the end of the day.
Today I’m sharing a handful of easy-to-prepare yet delicious clean eating recipes that you can whip up quickly for busy weeknights – enjoy!
5 clean eating recipes for weekdays
1. Easy enchiladas with roast chicken
These Easy Roasted Chicken Enchiladas are great for meal prep and are always a family favorite! I’m always amazed at how delicious they are considering they take so little time to prepare with so few ingredients. Seriously, they’re so good I forget they’re actually good for me. 2. Sushi roll in a bowl
This is one of our favorite dinners: baked salmon, rice (seasoned with rice vinegar and sesame seeds), chopped cucumber, avocado and seaweed snacks. Top with soy sauce and/or sriracha and enjoy! Tip: Prepare the rice in the Instant Pot for ease.
3. Dairy-free and gluten-free tuna casserole
This healthy tuna casserole is gluten-free, dairy-free, and high in protein! It’s a perfect family and kid-friendly dinner for a busy weeknight. This casserole is made with pantry staples like olive oil, Dijon mustard, minced garlic, and tuna (to name a few), and is a great option for making dinner ahead of time. Better yet, in just over 20 minutes, you’re all set!
4. Slow Cooker Greek Chicken Soup
The soup is an easy recipe that you can prepare in the slow cooker. Liv loves soup (this is her all-time favorite) and it’s an easy way for the family to get plenty of vegetables.
5. Chicken Sriracha and Cauliflower Stir-Fry
This Cauliflower Sriracha Chicken Stir Fry is the perfect option for a healthy dinner or lunch. It is high in protein, gluten-free, dairy-free, and family-friendly. Pack the extras as lunch or enjoy them as part of your weekly meal prep.
6. Gluten-free cashew chicken
I LOVE Chinese takeout, but I really don’t like how it makes me feel afterwards. It makes me feel quite bloated and sad. I don’t really like fried food as much as I love it, so I try to avoid it as much as I can. BUT, this Cashew Chicken fills me with the warm vibes that Chinese takeout brings, without the yucky feeling afterwards! This is a definite option when you’re craving a tasty meal at my house!
7. Carnitas and Jackfruit Burrito Bowl
I originally made this as a lunch idea, but I’d be lying if I said I didn’t love it when I craved a light dinner. It’s one of my favorite lunches or dinners after a hot day. It’s healthy, suitable for vegans and, above all, DELICIOUS! If you want to add a little more, you can even add some olives, cilantro, or even corn. Don’t be discouraged if you’ve never tried jackfruit, you can flavor it any way you want!
8. Non-fried chicken
I love this crispy, flavorful, and incredibly flavorful non-friend chicken made in one skillet. It’s healthy, easy to prepare and tastes exactly like the real thing. I live to eat delicious food that doesn’t clog my arteries or make me feel gross. Pair this non-friend chicken with a fresh, nutritious salad and you have a healthy weeknight meal.
9. Chicken with Mediterranean cauliflower rice
Talk about delicious! This incredibly tasty, protein-packed, low-carb dinner is definitely one of my favorites. Even children devour this super healthy food with all its goodness. You can even add some roasted sweet potatoes for volume if you have a hungry husband at home.
10. Chicken tacos with homemade tortillas
I’ll be the first to say that I’m a bit of a #tortillasnob. That’s why I almost always resort to making my own, like in this recipe. This healthy meal is very easy and definitely worth it for its great taste. Simply make your tortillas, pack them with your favorite fillings (we did cilantro, mashed black beans, shredded chicken, spinach, salsa, sour cream, and cheese). Oops, now I’m craving them again!
