Method
- Prepare an 8×8 inch pan with parchment paper.
- Let the ice cream sit at room temperature for 5 minutes.
- Pour the ice cream into the pan and spread it into an even layer. Chop the Quest Hero Bar into small pieces and sprinkle them over the ice cream. Cool overnight.
- Cut the ice cream into 8 rectangles and insert a popsicle stick into each one. Return to the freezer for 1 hour.
- Melt the chocolate and coconut oil in a glass jar and dip each popsicle into the chocolate then place each on a baking sheet lined with parchment paper.
- Freeze until ready to eat.
