Ingredients

CHILI AND LIME BREAKFAST NACHOS

  • 2 eggs
  • 1 tablespoon heavy cream
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup cheddar cheese
  • 2 bags Quest Chili Lime Protein Chips
  • ½ avocado, chopped
  • ¼ cup fresh pico de gallo
  • 1 tablespoon green onion, chopped
  • ¼ jalapeno, sliced

Method

  1. Turn on your oven to roast.
  2. Prepare a small cast iron skillet with nonstick spray and turn on low heat.
  3. Beat eggs, heavy cream, salt and pepper.
  4. Pour the eggs into the hot skillet and use a rubber spatula to stir.
  5. Remove the eggs and add a layer of Quest Chips, scrambled eggs, half of the cheddar cheese, another layer of chips, and the remaining cheese.
  6. Place the pan in the oven for 3-4 minutes and the cheese will have melted. Top with pico de gallo, avocado, jalapeño and green onion. Serve immediately.
