Ingredients
CHILI AND LIME BREAKFAST NACHOS
- 2 eggs
- 1 tablespoon heavy cream
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ cup cheddar cheese
- 2 bags Quest Chili Lime Protein Chips
- ½ avocado, chopped
- ¼ cup fresh pico de gallo
- 1 tablespoon green onion, chopped
- ¼ jalapeno, sliced
Method
- Turn on your oven to roast.
- Prepare a small cast iron skillet with nonstick spray and turn on low heat.
- Beat eggs, heavy cream, salt and pepper.
- Pour the eggs into the hot skillet and use a rubber spatula to stir.
- Remove the eggs and add a layer of Quest Chips, scrambled eggs, half of the cheddar cheese, another layer of chips, and the remaining cheese.
- Place the pan in the oven for 3-4 minutes and the cheese will have melted. Top with pico de gallo, avocado, jalapeño and green onion. Serve immediately.
