Ingredients

Method

  1. Preheat the oven to 425 F and prepare a large baking sheet with the oil and place it in the oven.
  2. Wash the potatoes well and use a box grater to shred the potatoes and onion.
  3. Transfer the grated potatoes and onion to a clean kitchen towel and drain all the water.
  4. Let it sit for 5 minutes and then drain again until all the liquid is gone.
  5. Add the drained potatoes and onion to a bowl along with the egg, crushed potato chips, and salt and pepper. Use your hands to combine.
  6. Remove the baking sheet from the oven and use an ice cream scoop to make 12 mounds.
  7. Press down the mounds with a spatula.
  8. Bake for 13-15 minutes, flip and bake for 5 more minutes.
  9. Serve with sour cream and chopped green onion if desired.
