Blender Banana Oatmeal Muffins

The Oatmeal Banana Blender Muffins will allow you to make muffins so fast that you will be clean 10 minutes before the muffins come out of the oven.

Yes, I’m still making muffins this year. I’ve made whole wheat banana muffins and Kodiak Cakes muffins. Kodiak cakes are very quick because they use Kodiak Cakes pancake mix.

This time I used my blender. Because? Because there’s simply no reason to buy baked goods when you can make healthy versions at home with things you have lying around.

How many of you have bananas, oatmeal, and yogurt in your house right now? I can’t see your hands, but I assume most of you can. Put them in the blender!

Good? This mixes quickly and you can then pour the batter into the muffin cups.

I found them a little bland on their own, so I added some chocolate chips I found in the back of my pantry. What else could you find there? Nuts, dried cranberries, coconut? How about some frozen blueberries in the bottom of your freezer?

I added my extra mixture to the dough in the blender because I was afraid of what would happen if I turned it on.

My blender, Blendtec, is pretty amazing. The jug broke after 2 years of use and they sent me a new one for free. I didn’t receive this device for free (sometimes they send me things like this). I bought it for myself and have been known to share it with my family.

I keep it on my counter (main space) and use it almost every day (smoothies, soups, sauces). He is a workhorse and fits in my dishwasher. LOVE!

Blender Oatmeal Muffins Recipe

Ingredients

2 cups rolled or instant oats
2 large or 3 small ripe bananas
2 eggs
1 cup plain nonfat Greek yogurt (or any plain yogurt)
3 tablespoons honey or agave syrup (optional)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
pinch of salt
1/2 cup chocolate chips, walnuts, coconut, blueberries, cranberries, etc. (optional) to mix

Instructions

Heat oven to 400F. Spray a 12-muffin pan with nonstick spray or add ramekins and lightly spray them with spray. Add the oats, bananas, eggs, yogurt, honey, baking powder, baking soda, vanilla and salt to the blender and allow the oats to pulverize (about 2-3 minutes).

Add the mixture and stir with a rubber spatula or long spoon. Pour batter into muffin cups. You can pour to the edge of the cup. Bake for 15-17 minutes until lightly golden. Serve when cold.
