Ingredients
RED VELVET LAVA CAKES
- 1 Quest Chocolate Double Chocolate Chip Cookie
- 4 eggs, room temperature
- 1 tablespoon no-calorie sweetener
- 1 teaspoon vanilla extract
- A pinch of sea salt
- 4 oz sugar-free chocolate chips
- 5 tablespoons melted butter, slightly cooled
- 2-3 drops of red gel food coloring
Method
- Preheat the oven to 350 F. Prepare 4 ramekins with nonstick spray and place them on a baking sheet.
- Cut the cookie into small pieces and place them on a baking sheet lined with parchment paper.
- Bake for 5 minutes and then place in the refrigerator to cool completely.
- Meanwhile, beat the eggs with the vanilla extract until light and fluffy, about 2-3 minutes.
- Transfer the cookie pieces, sweetener and salt to a nutribullet and mix until fine crumbs form.
- In a microwave-safe bowl, melt the chocolate and butter until smooth and allow to cool slightly.
- Add the cookie ingredients and melted chocolate to the egg bowl and stir until combined.
- Add the food gel. Distribute the dough between the four molds and bake for 15-19 minutes.
- The lava cakes are ready when they pull away from the sides but are still moist and plump on top.
- Turn cakes onto serving plates and sprinkle with cocoa powder. Serve with ice cream if desired.
