Ingredients
RANCHERA POTATO SKIN WITH CHEESE
- 4 medium russet potatoes (about 190 g each)
- 1 tablespoon butter, melted
- ¾ cup cheddar cheese, grated
- 4 strips bacon, crumbled
- 1 bag Quest Ranch Tortilla Chipscrushed
- 4 sour cream
- 1 jalapeno, sliced
- 1 tablespoon chives, chopped
Method
- Preheat the oven to 400ºF and prepare a baking sheet with parchment paper.
- Pierce the potatoes with a fork, place on the baking sheet, and bake for 1 hour (or microwave for 10 minutes, turning halfway through).
- Let cool for 20 minutes. Cut the potatoes in half lengthwise and remove the center, leaving ¼ of the potato.
- Each potato half should weigh about 65 g. Brush with melted butter and sprinkle with salt and pepper.
- Turn the oven on to broil and bake the potato skins again for 3 minutes, flip them over and bake for 3 more minutes.
- Meanwhile, in a bowl, mix together the cheese, bacon, and crushed potato chips.
- Remove the skin of the potatoes from the oven and fill with the cheese filling.
- Return to oven for 3-5 minutes. Finish with sour cream, jalapeno slices, and chives. Attend.
