Method

  1. Preheat the oven to 400 F and place a cast iron skillet in the oven to preheat.
  2. Place the crushed crackers in a large, shallow plate and add the fresh thyme.
  3. Coat tenderloin with mustard and then roll in crushed crackers until completely covered.
  4. Roast the tenderloin for 25-35 minutes and an internal temperature of 145 F in the thickest part of the pork.
  5. Let rest 10 minutes before cutting into 12 slices and serving.
