Have you ever thought about making a sandwich with pancakes? Turn a breakfast plate of pancakes, sausage, and eggs into a tasty portable pancake breakfast sandwich! This guest post was written by my foodie friend Elizabeth from Drift City!


Nothing screams breakfast to me like eating pancakes.

The smell alone is enough to transport me back to childhood, when my mom would make them on Saturday mornings. They are the best family breakfast because they are easy to prepare and there are many variations you can try.

You can go with a oat pancake (the mashed bananas give it a great flavor), a thick and fluffy pancake (this works well if you need a lot of pancakes), pancake tacos or use the cheese danish pancakes recipe for some extra protein.

My favorite way to enjoy pancakes is to make a breakfast sandwich similar to a McGriddle. Sweet pancakes with maple caramel, savory sausage and egg, and simple to prepare, this is the perfect option for a weekend breakfast.

Make it from scratch or take shortcuts

This recipe has some advanced steps: making the maple fudge and sausage patties from scratch. You can take a shortcut and skip the maple (drizzle some inside as a seasoning if you want the flavor) and use preformed sausage patties!

Better yet, make your pancakes ahead of time and you can have this sandwich ready in minutes on a weekday morning.

Here is my recipe for a delicious sweet and savory pancake breakfast sandwich.

Pancake Breakfast Sandwich Recipe

Ingredients

  • 1/3 cup maple syrup, grade A
  • 1.25 cups pancake mix (I used Kodiak, enough to make about 8 pancakes)
  • 1.25 cups water for pancake mix
  • 4 large eggs
  • 1 tablespoon of water
  • Salt and pepper
  • 4 sausage patties, pre-formed or pre-made
  • 4 slices cheddar cheese or equivalent grated cheese
  • Cooking spray, butter, or cooking oil

Instructions

Step One: Make the Maple Candy

The first step is optional if you want to give your breakfast sandwich a McGriddle twist. This is a fun way to add a little sweetness and is simple to make, although a little messy!

First, you will line a baking sheet with parchment paper and set it aside. Next, you will heat the maple syrup in a small skillet over medium heat.

The syrup will begin to bubble and foam before reducing (this takes about 4 to 6 minutes, depending on the stove). I recommend watching this carefully, as it can burn quickly and then you’ll have a very bitter tasting candy on your hands (yes, I’ve done this, and yes, it was gross).

Once it has reduced, immediately pour the syrup onto the parchment paper and use a spatula to spread it into a thin layer. Let it cool for about 10 minutes before breaking the caramel into small pieces (you’ll add it to the pancake batter later).

Step two: make the pancakes

In a small bowl, combine pancake mix with water. (If you are using a mix other than Kodiak cakes, add whatever oils or eggs the mix calls for.)

You will want to blend the ingredients until they are almost smooth. If you are using maple caramel, I mix it into the dough.

Once combined, make small pancakes in a greased skillet over medium heat. I recommend using a measuring cup for each pancake to ensure they are all the same size. If you don’t feel comfortable looking at the dough, feel free to use a circular mold or a glass jar lid if you have one available; You’ll just want to make sure whatever you use doesn’t melt in the hot pan.

Cook the pancake until golden brown (about 4 minutes) and then flip to finish the other side (about 2 minutes). Once cooked, set the pancake aside on a plate and repeat with the remaining batter until you have eight pancakes.

ADVICE: Preheat the oven to 250 and place the pancakes on a lined baking sheet to store in the oven so they stay nice and warm.

Step Three: Cook the Sausage

If you are using pre-made burgers, heat them here. If cooking from ground, form your patties and clean the frying pan or frying pan you used to make the pancakes, add a little more butter or oil and add the sausage. Cook for about 3-4 minutes or until internal temperature reaches 145°F. Once the sausage is cooked, place it on the plate or baking sheet with the pancakes.

Step four: make the eggs

Now it’s time for the eggs! In a small bowl, beat the remaining four eggs along with the water, salt, and pepper.

Clean the pan or skillet again (I just want to save on the number of dishes to clean!) and grease again. Heat the pan over medium heat and add the eggs.

If you want to make a folded egg, you will heat the egg until it sets on the bottom and around the edges, which will take about 2 minutes.

Then transfer the pan to the oven to cook until set, which should take another 3-4 minutes (make sure the pan is oven safe if you do it this way!).

You will then remove the pan and fold the eggs like an omelette before cutting them into sections.

For a stove option, Just make a traditional omelet on the stove and add the cheese to melt. You can also add any other ingredients that you think would go well. After all, salty and sweet always go together well, so adding some jalapenos or scallions can add a nice variation and take the sugar out of the syrup and pancakes.

Cut the egg or omelette into 4 sections.

Step five: assemble your sandwich.

Now that you have everything cooked, it’s time to assemble the sandwich!

Place a sausage patty on top of a pancake and add the egg and cheese before topping with another pancake. You can then continue heating them in the oven until they are tender and hot or you can use the skillet to do the same. Repeat with remaining ingredients to complete four sandwiches total.

Step Six: Enjoy the final product!

Now you can enjoy your pancake breakfast sandwich! This provides the best sweet and savory punch to start your day.

  • for the eggs: In a small bowl, beat the eggs with water, salt, and pepper. Clean the pan or skillet again and grease it again. Heat the skillet over medium heat before adding the egg mixture. For a folded egg, heat it in an oven-safe skillet until it sets on the bottom and around the edges, which will take about 2 minutes, and then transfer the skillet to the oven to cook until it sets on top, which will take about 2 minutes. (Alternatively, you can make a small tortilla on the stove with the cheese melted inside.)
