Turkey Pumpkin Chili Recipe

It’s time to buy a big, beautiful pumpkin and some cans of pumpkin puree to make pie.

Wait? Did I say cake? I must have made a mistake because I meant chili. pumpkinchiliingredients

Pumpkin is a great addition to chili. It’s cheap, easy, and has 763% of your daily value of vitamin A in one cup (and only 83 calories). You can introduce a lot of nutrients into foods by adding pumpkin.

Pumpkin is one of those ingredients that you will find on my list of healthy fall recipes. This recipe is quite different from my best vegetarian chili recipe.

This chili recipe below is the healthiest (meat) chili you will ever make. Contains 28% of your daily value for iron, 45% of your daily value for vitamin C, and 293% of your daily value for vitamin A per serving.

This is like a “rock star” nutritional chili. I used ground turkey breast because it is low in saturated fat and beans, corn and tomatoes to increase the vegetable content. This is what cooked ground turkey breast looks like:

I thought the flavor was nice, but it lacked the depth of chili con carne. I might put a little bit of cheese on top of mine to make it taste a little more luxurious. The squash gave a fantastic color and added creaminess to the chili.

Adding pumpkin to chili not only brings it closer to the dark color of chili, but also gives you more bang for your buck.

Here are some other suggestions to enhance the flavor:

  • Add a tablespoon of peanut butter
  • 1/4 cup finely chopped sun-dried tomatoes
  • 1 tablespoon dark cocoa powder
  • 1 jalapeno pepper sliced

Turkey and Pumpkin Recipe with Chili

Makes 6 servings, 1 cup per serving

Ingredients

1 tablespoon vegetable oil (such as canola, sunflower, etc.)
1 medium onion, chopped
1 pound ground turkey breast meat
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon cinnamon
1 teaspoon oregano
1 small can diced green chiles
1 can black beans, rinsed and drained
1 cup corn kernels, frozen or fresh
1 28-ounce can of tomatoes
1 can of 15.5 pumpkin puree
salt and pepper to taste

Instructions

In a large saucepan, heat the oil and add the onion. When the onion has softened (about 3 minutes), add the turkey and cook until cooked through (it should look white). Add the chili powder, cumin, cinnamon, oregano, diced green chiles, black beans, corn, tomatoes, and pumpkin puree and taste to adjust seasonings. You may need 1/2 teaspoon salt. Simmer for 10 minutes and serve.
